· ½ cup - Oil (or substitute with applesauce or yogurt)
· ¼ cup + 1 tablespoon - Buttermilk
· 1 teaspoon - Vanilla
· Nuts or Chocolate Chips (optional)
Mix the dry ingredients (flour, sugar, baking soda, salt). Mix the liquid ingredients (eggs, bananas, oil (or applesauce OR yogurt for a lowfat option), buttermilk, vanilla, and/or nuts/chocolate chips). Mix the liquid ingredients with the dry ingredients. Put in greased and floured bread (or muffin pans). Bake at 350°. Bake bread for 45 min - 1 hour. Bake muffins for 20 min.
